Carrot Cake

Last night for my dads birthday I wanted to make one of his favorite things; carrot cake. After scuffing up a few nails with the grater and sticking to a fairly easy recipe, I managed to bake a perfectly moist cake.

Almost looks like a butternut squash soup, right? It’s just the cake about to go in the oven.

What’s on top? Your first guess would probably be grated carrots, but it’s actually orange zest which makes for a heavenly finishing touch of unexpected flavor. The frosting oozes its vanilla/buttery/cream cheese richness down the sides when each piece is cut. Drooling yet?
